Bihari-Style Suran Chutney

This chutney is made with mashed elephant yam, mustard oil, spices, ginger, green chillies and lemon juice. Let it rest in the refrigerator for 2–3 days, then serve it as a side dish with your meals.

Ingredients

- 250 grams Elephant yam (Suran/Senai/Ratalu)
- 2 tablespoons Lemon juice freshly extracted
- 1 inch Ginger peeled and grated
- 3 Green Chillies finely chopped
- 1/4 teaspoon Turmeric powder (Haldi)
- 1 teaspoon Red Chilli powder
- 1/2 teaspoon Mustard powder
- 1/2 teaspoon Ajwain (Carom seeds)
- 1/4 teaspoon Asafoetida (hing)
- 2 tablespoons Mustard oil
- Salt as required
- Onion for garnishing, finely chopped
- Coriander (Dhania) Leaves for garnishing, finely chopped
